I want a Taco Truck!

The husband had a full day off this week so we took a a taco truck tour.  I am quite fond of pupusas, but not one truck we visited had any today.

Lunch at Casamento's

I believe I've mentioned my love for oysters. I particularly enjoy them raw. My dear friend, K., met me uptown at Casamento's this week, and we just gabbed away over a couple dozen and crabclaws.  An added treat was seeing Michael, a five time shucking champ, who was once the beloved oyster shucker at the now defunct Uglesich's. We found him right inside the front door with his oyster knife in hand.  Michael has also shucked for what Davis Rogan once coined in a song that he sang to our answering machine titled, "The Greatest Party in the World".  (thanks Davis) 
The first big party we threw at the Truckfarm was great and Michael was one of the reasons why.

Shrimp Po Boy

The Rampart Food Store is one of our favorite po boys in the city.  Around 1 o'clock the day after we learned that The Saints would be playing in the Superbowl, I jumped right out of bed, made a pot of coffee and ran on down to this loud orange corner store to get a celebratory shrimp on french.  Their po boy bread comes from a vietnamese bakery and is so super special!

One more thing, if you don't live in New Orleans and are rooting for the Saints in the Big Game, please consider coming on down for the celebration, win or lose(although we know we are going to win)  ...  I promise, you will be glad you did.

Mushroom Quesadilla




The best olive oil!  I am using it sparingly as to savor every drop!  Oh, and it does make a difference.



Delicious mushroom quesadillas for a quick supper.  The Mushroom mixture is criminis, garlic, shallot, parsley and a lot of fresh thyme.

Black & Gold Lemonade

This past Christmas I received one of these.  Immediately, I made lemon sorbet that was a bit underwhelming.  I forgot about this frozen treat until tonight.  A friend asked me this week if I could think of any black and gold foods for a special ball game this weekend(GO SAINTS!) -- well, my friend, K this one is for you!                      
The Black and Gold Lemonade
I used a 12 oz Mason jar
fill the glass with ice
add a handful of blueberries
fill with vodka to just above the word Mason on the jar
top with a handsome scoop of lemon sorbet and a splash of water
screw on that lid and give it a shake --an excellent feature of serving drinks in these jars
ok, I know they are blueberries -- so what?

Buffalo Burrito

I think we are on snack/hand food streak recipe-wise here at the R house.  I made a pot of beans overnight yesterday and wanted to not just have red beans and rice.  So here is one concoction:





Buffalo Burrito
Ingredients:
cooked red beans
hot sauce
blue cheese
cabbage






My friend C just returned from Mexico and shared a soup recipe with me she tasted while she was away.   This Bean Crema Soup used the pureed bean liquid(in the picture below left- I was able to siphon 3 cups of liquid from 1LB of cooked small red beans) and then I added a bit of heavy cream.  I spiced it up a bit and added in some whole cooked beans.  Garnished with some cilantro, grape tomatoes, cabbage & lime wedges.  Oooooh wheee ... so good!!!

January in Mexico

Matt and I spent a couple weeks in Mexico with our family this January.  My Aunt & Uncle have a wonderful beachfront house in Elias Calles about 40 miles north of Cabo.  We enjoyed exploring and tasting wherever we could.  The taco stands in and around Pescadero and Todos Santos are all unique, cheap & delicious.  Here's a sample of our trip:

Buffalo Chicken Tacos!


I think I made this up and it was STUPID GOOD!!!
Three boneless, skinless chicken breasts were placed in the slow cooker for 5 hours on low with half a bottle of hot sauce, I used Frank's Red Hot Wings sauce.  Afterwards, the chicken fell apart and I easily shredded the meat.  I topped the chicken filled corn tortillas with blue cheese, raw onions, lime wedges, cabbage & sour cream.   Outstanding!
