Iced Coffee

I love a cup of coffee in the morning.  Hot coffee can be the best, but as the days begin to warm up down South a cold cup just hits the spot!  My at home cold coffee fix, Cool Brew, is made right here in New Orleans.  French Roast is my favorite because it is chicory free.

I can't speak for other festivals, but if you work for JazzFest in New Orleans you will be fed like somebody loves you!  Spicy Gumbo and potato salad yesterday, oh my!

Blondies


I found this recipe for Sea Salted Blondies at Ice Cream before Dinner.  I threw a few bittersweet and peanut butter chips into the batter as well.

Easter 2010


Dyed and Deviled eggs -- Easter classics!
 

The Crawfish Bisque. My friend K. did the whole nine yards for Easter this year and I was honored to be invited and assist!


100 crawfish heads were cleaned after the crawfish boil. 80 LBS of live crawfish were boiled, 10 LBS of meat went into the bisque.

 The heads are stuffed with the crawfish & trinity seasonings.  K. learned this year to soak the heads in sparkling water for easier stuffing and less shell "crackage".
 Like many great New Orleans dishes, then you make a roux
