Mushroom Quesadilla

The best olive oil!  I am using it sparingly as to savor every drop!  Oh, and it does make a difference.

Delicious mushroom quesadillas for a quick supper.  The Mushroom mixture is criminis, garlic, shallot, parsley and a lot of fresh thyme.
