Soba Noodle Soup

Quick soup: vegetable stock, soba noodles, carrots, onion, mushrooms, green onions, lemongrass, soy sauce, rice vinegar.  Garnish with lemon wedges, bean sprouts and basil.  Perfect warm supper for this cold & rainy day.
